Candied 9 Day Pickles by Carol Lockamy

4 cups salt plain

2 gal. whole cucumbers

1 1/2 c. alum1 gal. vinegar

1 box cinnamon sticks

1/2 box whole cloves

2 tbsp. celery seeds

2 tsp. turmeric

Dissolve 4 c. Salt in boiling water, pour over 2 gal whole cucumbers. Let stand 24 hrs. Drain off. Put alum in boiling water. Cover cucumbers. Let sit 24 hrs. Drain off Boil clear water and pour over. Let sit 24 hrs. Drain. Boil 1 gal. vinegar and spices for 20 minutes, pour over and let sit for 9 days.

Pour off and throw vinegar away. Slice pickles and layer them with sugar until you use 5 lbs. Note: for the best pickles use the same day they are picked, cut 1/4 inch slice off each end of whole cubes. Use a large crock or container; glass gal. jars work well.
